Ingredients:

1 bag Success® Tri-Color Quinoa
1 lb extra lean ground beef
1/4 cup finely chopped onion
1/4 cup grated carrot
2 Tbsps ketchup
garlic cloves, chopped
1 Tbsp soy sauce
1/2 tsp ground black pepper
1/2 tsp salt
1/4 tsp dried oregano leaves
1/4 tsp dried thyme leaves
egg
1 1/2 cups marinara sauce
1/2 cup shredded mozzarella cheese
2 Tbsps chopped parsley

Cooking Directions:

Prepare quinoa according to package directions.  Preheat oven to 400°F. Grease a large baking dish with olive oil or cooking spray; set aside.

In a large bowl, mix together all ingredients except the marinara sauce, cheese and parsley. Form into walnut-sized balls and arrange on baking sheet. Roast in oven for approximately 20 minutes or until cooked through and golden brown. Spoon sauce on top, then sprinkle with cheese; bake an additional 5 minutes or until sauce is hot and cheese is melted. Remove from oven and sprinkle with parsley.

Try this recipe as an appetizer!  Also, great for sliders. Slice dinner rolls in half and place meatballs on bottom halves and cover with tops.
