2 bags Success® White Rice or Success® Brown Rice
  non-stick cooking spray
1/2 cup fat free Cheddar cheese, shredded
1/4 cup Parmesan cheese, shredded
1 tsp ground cumin powder
1/2 tsp ground red pepper
1 tsp salt, divided
2 Tbsps lime juice
1/4 cup chopped fresh cilantro leaves
1/4 cup onion, finely chopped
1/4 cup salsa
1/4 cup fat free sour cream
  fresh cilantro leaves, for garnish (optional)

Cooking Directions:

Preheat oven to 350°F. Prepare rice according to package directions. Spray a mini-muffin pan with non-stick cooking spray.

Combine cooked rice, cheeses, cumin, red pepper, and 1/2 teaspoon salt.  Press firmly and evenly into prepared mini-muffin tins. Bake for 15 minutes. Remove from pans and cool.

Mash avocados with fork in a medium bowl. Sprinkle with lime juice. Add cilantro, onion, salsa, sour cream and remaining salt; blend. Fill each cup with guacamole and top with a sprig of fresh cilantro.
