2 bags Success® Brown Rice
1 Tbsp olive oil
onion, chopped
2 each minced garlic
eggplant (about ½ lb), unpeeled, cut into ½-inch cubes
1/4 lb mushrooms, sliced
green bell pepper, chopped
1 can (15 oz.) tomato sauce
1/2 cup vegetable broth
1 1/4 tsps dried thyme leaves, crushed

Cooking Directions:

Prepare rice according to package directions. Heat oil in a medium skillet over medium heat. Add onions and garlic; cook and stir until tender. Add vegetables; cook, stirring constantly, until liquid is evaporated, about 5 minutes. Stir in tomato sauce, broth, and thyme. Reduce heat to low; simmer 10 minutes. Add rice; heat thoroughly, stirring occasionally.
