2 bags Success® Tri-Color Quinoa
3 Tbsps olive oil
1 Tbsp finely grated lemon zest
2 Tbsps fresh lemon juice
1 Tbsp shallot, minced
1 Tbsp Dijon mustard
1/2 cup parsley, chopped
1/2 cup cucumber, seeded and chopped
1 cup cherry tomatoes, halved
green onions, sliced
1 Tbsp fresh mint leaves, chopped
  salt, to taste
  ground black pepper, to taste
1/4 cup crumbled feta cheese (optional)

Cooking Directions:

Prepare quinoa according to package directions.  Cool.

In a medium bowl whisk together olive oil, zest, lemon juice, shallot and mustard.  Fold in cooked quinoa, parsley, cucumber, tomatoes, onions and mint.  Season with salt and pepper.  Top with cheese, if desired.

Pro Tip:  Add 1 tablespoon vegetable bouillon granules to the cooking water.
