Ingredients

2 bags Success® Brown, White or Jasmine Rice
1 Tbsp olive oil
1 lb chicken breast, cubed in 1/2-inch pieces
4 each celery ribs and green onions, sliced 1/4-inch thick
1 each large red bell pepper, diced
1/3 cup sesame ginger marinade
1 pkg (6 oz) fresh baby spinach leaves

Directions

Prepare rice according to package directions.
 
While rice is cooking, heat olive oil in large non-stick skillet and cook chicken on medium - high heat for 10 minutes, stirring occasionally. Add celery, green onions and red pepper: cook 2 minutes.
 
Add cooked rice and marinade to skillet and stir to combine ingredients.
 
Serve over spinach leaves. Garnish with celery leaves, if desired.
Brown Rice is an excellent source of whole grains.
