Directions

Prepare rice according to package directions.
While rice is cooking, heat olive oil in large non-stick skillet and cook chicken on medium - high heat for 10 minutes, stirring occasionally. Add celery, green onions and red pepper: cook 2 minutes.
Add cooked rice and marinade to skillet and stir to combine ingredients.
Serve over spinach leaves. Garnish with celery leaves, if desired.
