Directions
Prepare rice according to package directions.
Place flour in shallow bowl. Beat egg until foamy in second shallow bowl. Combine bread crumbs, Parmesan cheese and seasoning in third shallow bowl. Dredge chicken in flour, shake off excess flour. Dip chicken in egg and then into bread crumb mixture.
Heat oil in large skillet over medium-high heat and cook chicken 6 minutes on each side, or until cooked through. Remove and set aside; cover to keep warm.
Add tomatoes and olives to skillet and heat through. Serve chicken over hot rice with sauce spooned on top.
