Ingredients

1 bag Success® White, Success® Brown, or Success® Jasmine Rice
1/4 cup Parmesan cheese, grated
1 pkg (8 oz) cream cheese, softened
1 lb hot Italian sausage, bulk
4 each poblano peppers, split lengthwise and seeded
8 each thin sliced bacon
salt and pepper

Directions

Prepare rice according to package directions.
 
Preheat oven to 400 degrees.

In a large bowl, combine the cheeses, sausage and cooked rice. Mix well. Stuff each poblano pepper half with mixture. Wrap pepper with a slice of bacon. Place eight pepper halves on a baking sheet.

Bake 25 minutes. Turn on broiler and cook for approximately 5 minutes or until bacon is crisp.

TIP: Substitute bell peppers instead of poblano peppers.
Brown Rice is an excellent source of whole grains.
