Directions
* Thai red curry paste can be found in the International section at most grocery stores.
Prepare rice according to package directions.
In a small bowl, combine coconut milk, curry paste, brown sugar, lime juice and salt. In a non-stick pan, over medium heat, combine chicken and vegetables, then add curry sauce. Cook until heated through.
Place rice in bowls and top with chicken curry mixture. Garnish with chopped peanuts, if desired.
Tip: For more flavorful rice substitute remaining coconut milk for 1 cup of the water when preparing rice.
