Mexican Rice Cups

Ingredients

2 bags Success® White Rice or Success® Brown Rice
1/2 cup fat free cheddar cheese, shredded
1/4 cup Parmesan cheese, shredded
1 tsp ground cumin
1/2 tsp ground red pepper
1 tsp salt, divided
non-stick cooking spray
2 ripe avocados
2 Tbsp lime juice
1/4 cup onion, finely minced
1/4 cup finely chopped fresh cilantro leaves
1/4 cup prepared salsa
1/4 cup fat free sour cream
fresh cilantro leaves, for garnish (optional)


Cook This Recipe

Preheat oven to 350°F. Prepare rice according to package directions. Spray a mini-muffin pan with non-stick cooking spray.

Combine cooked rice, cheese, cumin, red pepper, and 1/2 teaspoon salt.  Press firmly and evenly into prepared mini-muffin tins. Bake for 15 minutes. Remove from pans and cool.

Mash avocados with fork in a medium bowl. Sprinkle with lime juice. Add cilantro, onion, salsa, sour cream and remaining salt; blend. Fill each cup with guacamole and top with a sprig of fresh cilantro.
