Santa Fe Chicken and Rice
Makes 4 Servings
Ingredients:

vegetable cooking spray |

seasoned chicken tenders |

(11 oz.) Mexi-corn, drained |
| 1 |
jar |
(8 oz.) mild salsa |
| 1 |
can |
(15 oz.) black beans, drained and rinsed |
| 1 |
cup |
jalapeño Monterey Jack cheese, shredded |
Directions:
Prepare rice according to package directions. While rice is cooking, heat skillet and spray with vegetable cooking spray. Heat skillet and add chicken. Cook until chicken is no longer pink. Stir in corn, salsa, beans, and cooked rice. Sprinkle with cheese. Heat until cheese is melted.
