Ingredients

1 bag Success® White Rice or Success® Brown Rice
1 1/2 cups almonds, slivered
1 cup celery, sliced
2 medium carrots, sliced
1 medium apple, chopped
3/4 cup fat free mayonnaise
1 Tbsp sugar
1 tsp lemon juice
1/2 tsp salt
1/2 tsp ground black pepper

Directions

Prepare rice according to package directions.  Cool.

Place rice in a large bowl.  Add almonds, celery, carrots, and apple; mix lightly.  Blend together mayonnaise, sugar, lemon juice, salt and pepper in a small bowl.  Add to rice mixture; toss gently to coat.  Refrigerate for 1 hour.
Brown Rice is an excellent source of whole grains.
