Rocky Mountain Rice Salad
Makes 4 Servings
Ingredients:

Success® White or Success® Brown Rice |

cooked, chopped chicken |
| 1 |

raisins |
| 1/4 |
cup |
celery, finely diced |
| 2 |

sunflower seeds |
| 1 |

fat-free Ranch salad dressing |
| 1 |
can |
(11 oz.) mandarin oranges segments, drained |
| 4 |

large red leaf lettuce leaves, for garnish |
Directions:
Prepare rice according to package directions. In large mixing bowl, combine rice, chicken, raisins, celery, and sunflower seeds. Add your choice of prepared salad dressing and stir to coat all ingredients well with dressing. Fold drained orange segments into mixture.Cover with plastic wrap and chill for at least 1 hour. To serve, wash lettuce leaves and dry thoroughly on paper towels. Line small serving bowls with lettuce leaves and spoon chilled salad into the center of each dish. Serve chilled.
