Ingredients

2 bags Success® White Rice or Success® Brown Rice
1/2 cup onion, finely chopped
1/2 cup green bell pepper, finely chopped
1/2 cup sweet pickle relish
1/4 cup pimiento, diced
1/4 cup ripe olives, diced (optional)
1/2 cup radishes, sliced
3/4 cup fat free mayonnaise
2 tsp prepared mustard
1/2 tsp ground black pepper
tomato wedges, optional
ripe olives, optional

Directions

Prepare rice according to package directions. Cool. Add onion, green pepper, relish, pimento, olives, and radishes. Combine remaining ingredients and stir into rice mixture until thoroughly blended. Chill. Serve on bed of lettuce and garnish with tomato wedges and ripe olives, if desired.
Brown Rice is an excellent source of whole grains.
