Spring Salad

Salad
Makes 4 Servings

Ingredients:

1 bag Success® White or Success® Brown Rice
2 cans (5 oz each) chunk ham
1 cup green bell pepper, diced
1 cup red bell pepper, diced
2 tbsp onion, diced
1 cup fat-free, reduced sodium French salad dressing
1 tbsp light soy sauce
1 tsp sugar
1 can (11 oz) mandarin orange segments, drained


Directions:

Prepare rice according to package directions. Combine rice, ham, peppers and onion. Add remaining ingredients and toss gently. Serve cold on lettuce leaves.
