Ingredients

1 bag Success® White Rice or Success® Brown Rice
2 cups chicken, cooked and cubed
1/2 cup raisins
1/4 cup celery, finely diced
2 Tbsp sunflower seeds
1 cup prepared creamy bacon or Ranch salad dressing
1 can (11 oz.) mandarin orange segments, drained
4 large Romaine lettuce leaves, for garnish

Directions

Prepare rice according to package directions.

In large mixing bowl, combine rice, chicken, raisins, celery and sunflower seeds. Add your choice of prepared salad dressing and stir to coat all ingredients well with dressing. Fold drained orange segments into mixture. Cover with plastic wrap and chill for at least 1 hour.  Arrange lettuce leaves on four serving plates.  Top with salad.

Brown Rice is an excellent source of whole grains.
