Directions
Prepare rice according to package directions. Preheat oven to 375°F.
Heat oil in a large skillet. Sauté mushrooms, onions, and
garlic for 5
minutes or until all liquid is absorbed. Sprinkle flour over mushroom
mixture; stir. Stir in milk and bring to a boil, stirring frequently.
Reduce heat and simmer for 2
minutes. Remove from heat and stir in rice, ¾ cup cheese, broccoli and
salt. Mix well. Pour into a 2-quart casserole dish and top with remaining
cheese. Cover with aluminum foil and bake for 10 minutes.
TIP: Stir in 2 cups cooked chicken or tuna to create a main dish.
