2 large eggs
salt, to taste
1 Tbsp reduced calorie margarine
butter, optional
reduced calorie maple syrup, optional

Directions

Prepare rice according to package directions. Crack open eggs into bowl. Slightly beat egg with fork. Add cooked rice and salt. Over medium heat melt margarine in skillet. Drop mixture by spoonfuls onto skillet. Brown two minutes on each side by turning frequently with a spatula. Serve hot. If desired, top with butter and reduced calorie maple syrup.
Brown Rice is an excellent source of whole grains.
