Rice Pancakes

Breakfast/Brunch
Makes 4 Servings

Ingredients:

1 bag Success® White or Success® Brown Rice
2 large eggs
pinch of salt and pepper
1 tbsp reduced calorie margarine
butter, optional
1 reduced calorie maple syrup, optional


Directions:

Prepare rice according to package directions. Crack open eggs into bowl. Slightly beat egg with fork. Add cooked rice, salt and pepper. Over medium heat melt margarine in skillet. Drop mixture by spoonfuls onto skillet. Brown two minutes on each side by turning frequently with a spatula. Serve hot. If desired, top with butter and reduced calorie maple syrup.
