Jumpin' Jambalaya

Dinner/Main Dish/Entrée
Makes 4 Servings

Ingredients:

2 bags Success® White or Success® Brown Rice
1/2 cup frozen vegetable blend (bell peppers, onions, celery), thawed
1 can (14.5 oz.) Cajun stewed tomatoes
1/2 cup cooked shrimp
1/2 cup chicken, cooked and cubed
1/2 tsp Cajun seasoning
1 cup frozen green peas, thawed


Directions:

Prepare rice according to package directions. In a medium skillet, over medium high heat, combine vegetable blend, tomatoes, shrimp, chicken, and seasoning. Cook for 10 minutes. Fold in cooked rice and peas. Heat for an additional 5 minutes and serve.




Brown Rice is an excellent source of whole grains.
